Sodium Metabisulfite is a widely used powder in wine making. Used in low amounts it can kill off wild yeast which ensures you only ferment with the yeast strain you choose. Used in higher amounts it can be used as a sanitizer. Great for use with our bottle rinser to sterilize bottles. Will also prevent oxidation of wines. We recommend adding a 1/4 teaspoon to every 6 gallon batch if of wine you intend to keep it over a year.
